Good Evening!!!
Today I made dinner - Yes, Zachary was the taste tester this evening and I was the cook (usually it is the other way around).
I was watching Giada on the Food Network one day and she made this amazing simple pasta that reminded me of summers back at home. My hometown best friend Michelle and I would make these amazing pasta salads for lunch some days with fresh veggies and Italian dressing - and even sometimes shrimp!
Unlike the pasta salads, this is a hot dish but probably could be served cold as well!
Also for a healthier version, I used brown rice Fusilli instead of regular.
Here is the recipe:
Ingredients
1 pound fusilli
3 tablespoons evoo
2 garlic cloves, minced
3 cups cherry tomatoes, quartered (1 1/2 pints)
1 tsp salt
1/2 tsp freshly ground black pepper
1/2 cup packed fresh basil leaves, torn
8 ounces fresh mozzarella, diced (about 1 1/2 cup)
Directions
Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, 8 to 10 minutes. Reserve 1/2 cup of the pasta cooking liquid then drain the pasta and transfer to a large bowl. Heat the olive oil in a medium skillet over medium heat. Add the garlic and saute until fragrant, about 2 minutes. Add the tomatoes, salt, and pepper. As the tomatoes cook and soften, smash them with a fork. Continue to cook until the tomatoes make a chunky sauce, about 4 minutes. Add the tomato sauce to the bowl with the pasta and too to combine. Stir in the basil leaves and mozzarella, then add the reserved pasta water, 1/4 cup at a time, until the pasta is moist.

Peanut Butter Chocolate Chip and Oatmeal Cookies
Dessert Time!
So Monday was my boss Erin's Birthday - she was turning 22 ;)!
She is gluten intolerant and therefore can only have gluten free food! So I decided to buy her a Starbuck's coffee and make the rest of the office Peanut Butter Chocolate Chip and Oatmeal cookies. They are to die for! (Erin did try a bite!)
I'm sure this can be made with a gluten-free flour as well, but unfortunately we didn't have any at home.

I have been known to make a mean chocolate chip cookie in my day, but these are probably the best I have ever had. You have to try!

Library Time!
Good Morning everyone!
Hope all is well!
Wanted to share a couple books I have read and am about to read.
Last week, Zachary and I went to the Library. There, I picked up some guilty pleasure books from Danielle Steel and Janet Evanovich, both NYT Bestselling Authors, as well as Water for Elephants and Too Close to the Falls - both books were referred to me by Zach's Nana.
I read both the Steel and Evanovich books in 1 week.
The Steel book was 44 Charles St. This was a book about a artsy girl living in New York and trying to pay her mortgage on her house as well as save her Art Gallery after a break up with her boyfriend. She takes in roommates (3 of them) and becomes family with all 3 of them. This book has romance, mystery, and suspense all packed into one. I normally don't read Daniel Steel books - when I think of her I think of these totally over-the-top romance novels. But this wasn't at all like that. I found this book on a top seller list off the internet. I really enjoyed it. It was a quick easy read.
The Evanovich book I read was Wicked Apetite. This is a great fantastical series starting out about the 7 deadly sins. I'm excited to read the next book coming out in June called Wicked Business. But if you like vampires, like I do, this is an ADULT book that has all that piled into one. It's a little out there so you have to follow along but I thought it was great! It's about Lizzy and Diesel - two Unmentionables - that you learn about - trying to find stones for the 7 Deadly Sins. It takes place in Salem - which already has a crazy history already with the memories of the Salem Witch trials. It was a fun read.
Next up on my list is Water for Elephants which I have not seen the movie for yet because I don't know how much I like Rob Pattinson with Reese Witherspoon - I like them on their own! But we shall see!

Tea of the Week!
This weeks "Tea of the Week" is from Harney & Sons - which is a tea company located in New York. I am currently drinking "Peppermint Herbal Tea."
I get this tea when I come visit my sister and parents in Mequon. It can be bought at Sendik's there. I am not sure if the other Sendik's carry it or not like in Germantown or Whitefish Bay. But I know it is at the Mequon location.
This tea is very refreshing in the morning on my way to work. Just kind of wakes you up with the peppermint smell and flavor. Not to mention - the tea bags are super cute - and the tins they come in can be used for anything when they are empty!

I'm a Godmother!
Snickerdoodle Cupcakes...
Happy Monday everyone!
It has been a while since I posted due to some big family events that happened this weekend. I will post about that shortly...
But first, for the weekend, I decided to try a new recipe I found on the Brown-eyed Baker website. They are called Snickerdoodle Cupcakes.
I love anything snickerdoodle. Sugar + Cinnamon = GREATNESS!

Rabbit - Rabbit - Rabbit

When I was younger, my mom would always tell me "rabbit, rabbit, rabbit" on the first day of each month as a form of good luck. I am not sure where this tradition originally started, but I wanted to wish you all luck for the next month!
